No-Bake Fromager d' Affinois Cheesecake

Say ‘I love you’ with this easy-to-make, French riff on the classic cheesecake, a perfect dessert for a romantic night in.



  • ½ lb Fromager d’ Affinois, rind removed
  • 1 lb cream cheese
  • ½ cup sugar
  • 2 tsp vanilla extract
  • 2 ½ tsp unflavored gelatin
  • ¾ cup graham crackers, crushed
  • 2 tbsp unsalted butter, melted


  1. In a food processor or blender, combine the Fromager d’ Affinois, cream cheese, sugar and vanilla extract until smooth.

  2. Place milk and gelatin into a small saucepan and let stand for 5 minutes. Cook and stir the mixture over low heat until gelatin is dissolved.

  3. Mix in the gelatin mixture into the cream cheese mixture.

  4. In a medium bowl, stir together the crushed graham crackers and melted butter until crackers are moistened. Press mixture on bottom of an 8-inch pie pan.

  5. Pour final mixture into the graham cracker crust. Cover and chill overnight.
