The best way to store cheese is to:
- Wrap the cheese in wax or parchment paper.
- Cover with plastic wrap or aluminum foil.
- Keep it on the lowest possible shelf of your refrigerator or in a cool dark cupboard if itā€™s a hard aged cheese.
- Use fresh paper and plastic wrap each time you open it.
The higher the moisture content of the cheese, the less time it will keep. The lower the moisture content, the longer the cheese will keep. Therefore, Parmigiano-Reggiano will keep longer than Brie.
Generally a fresh cheese will keep 5-8 days, while an aged cheese can easily keep for months at a time. Try to buy cheese in quantities you can consume within a few days.
