Layered Pizza Lasagna

Mealtime is a lot more fun for everyone when the kids get to help pull dinner together. This lasagna-style triple-decker pizza is a case in point. Assembled inside cake pans, it uses pita bread rounds as its ready-baked crusts. The kids can add the cheese and other toppings, and then it's ready for the oven.

Ingredients

  • 6 white or whole wheat pita breads, 7" or 8" diameter
  • Vegetable oil pan spray
  • 4 cups shredded mozzarella cheese
  • 2 cups tomato sauce or pizza sauce
  • 1 package (14 oz.) Private Selection™ Old World pepperoni
  • Cooked bacon, mushrooms, sausage, sweet peppers or other toppings, to taste (optional)
  • TIPS:
  • Leftovers can be saved for school lunches, if you wish. Portion the leftovers and refrigerate them within 2 hours of cooking, and send them to school in an insulated lunch bag with a frozen gel pack. The wedges are tasty cold, but better when reheated in a microwave.

Directions

  1. Heat your oven to 400°F. Spray two 8″ round cake pans with vegetable oil, to minimize sticking and speed cleanup. Then spray the pita breads on each side. This helps keep them from becoming soggy as the pizza bakes.

  2. Have your kids press a pita into the bottom of each cake pan and sprinkle it with mozzarella. Show them how to pat down the mozzarella so it makes a relatively firm layer over the pita bread. Spoon tomato sauce over the cheese (like the pan spray, the cheese helps keep the bread from getting soggy).

  3. Supervise the youngsters as they top the first layer with pepperoni, and then layer on any additional toppings you (or they) choose.

  4. Repeat the process for two more layers, but flatten the cheese onto each pita before adding it to the pan. These should mostly fill the cake pans. Pour the remaining tomato sauce over the pita layers, then top with the last of the mozzarella.

  5. Bake the pizzas for 25-30 minutes, until the sauce is bubbly and the cheese begins to brown. Remove them from the oven and rest them for at least 10 minutes, so they can cool slightly and the cheese can set.
