Grilled Salmon with Mediterranean Salsa

Savory vegetables and a bit of mint bring great flavor to this salmon recipe.

  • ½ cup English cucumber, chopped
  • 2 Roma tomatoes, seeded and chopped
  • ¼ cup red onion, chopped
  • ¼ cup Kalamata olives, cut in half
  • 2 Tbsp. fresh mint, chopped
  • 2 Tbsp. olive oil
  • ½ tsp. lemon zest
  • ¼ tsp. Kosher salt
  • 4 6 oz. salmon filets, skin removed
  • 1 Tbsp. olive oil
  • ¾ tsp. Kosher salt
  • ½ tsp. ground black pepper


  1. In a bowl toss together cucumber, tomato, onion, olives, mint, oil, lemon zest and salt; set aside.

  2. Heat grill; gas grill to medium-high heat or charcoal until ashes are white. Season salmon with oil, salt and pepper.

  3. Grill salmon, skin side up, 4-5 minutes or until fish easily releases from the grill; flip and continue cooking 3-5 minutes or until internal temperature reaches 145°F and flakes easily with a fork. Serve with salsa.

  4. Refrigerate leftovers.
