Grilled Peaches with Thyme-Lime Glaze

  • ¼ cup lime juice, freshly squeezed
  • ¼ cup water
  • ½ cup sugar
  • 2 Tbsp. thyme, freshly chopped
  • 8 peaches
  • 2 Tbsp. unsalted butter, melted
  • Heavy cream (optional)


  1. Heat the grill to medium heat. Bring the lime juice, thyme, water and sugar to a boil in a saucepan. Stir the glaze and set the saucepan aside.

  2. Rinse the peaches and slice them in half. Remove the stones.

  3. Brush the peaches all over with melted butter. Place the peaches cut-side down on the grill away from direct flame. Grill the peaches for 5 minutes and turn them over.

  4. Brush the tops of the peaches liberally with glaze. Cook the peaches for another 5 minutes and remove from grill. Serve the peaches cut-side up and drizzled with cream, if desired.

Rarely does such little work produce a dish as rustic and refined as grilled peaches. A 5-minute glaze made from lime juice and fresh thyme provides the perfect balance to the smokiness from the grill. Use natural lump charcoal if you're using a barbecue grill. You can use either white or yellow peaches in this recipe. White peaches, which have pink skin, are a bit firmer and have more acidity than yellow peaches, while yellow peaches have more of the classic flavor associated with the fruit. You can grill other foods while you do the peaches; just place the peaches away from meat and direct flame.
