Dietitianâ€™s Favorite Nectarine Caprese Salad
This Italy-inspired salad is fresh, tasty and simple to make!
- 2 Roma tomatoes, sliced into 3-4 slices each
- 4 oz. fresh mozzarella, sliced into 6-8 slices
- 8 large basil leaves
- 2 nectarines, pit removed and halves sliced thin
- ÂĽ cup balsamic vinegar
- Salt and pepper, to taste
In a small saucepan, simmer balsamic vinegar until thickened (should coat the back of a spoon). Remove from heat and allow to cool.
For each serving, layer one slice of tomato, 2 slices nectarine, one slice mozzarella and one basil leaf. Repeat until half the ingredients are incorporated. Repeat entire process to make second serving.
Drizzle with vinegar reduction and sprinkle with salt and pepper.
