Curried Chicken with Mango

You'd be hard pressed to find a more pleasing combination of spicy and sweet than curried chicken and mangoes!

Ingredients

  • 2 tsp. fennel
  • 2 tsp. coriander seeds
  • 2 tsp. cardamom pods
  • 1 tsp. fennel seeds
  • 1 tsp. garam masala
  • 1 tsp. chili flakes
  • 1 tsp. turmeric
  • 1 tsp. cumin
  • 3 Tbsp. vegetable oil
  • 3 Tbsp. coconut milk
  • 1 tsp. oyster sauce
  • 1 tsp. sugar
  • ½ tsp. kosher salt
  • 1 onion, peeled and quartered
  • ½" piece ginger, peeled and roughly chopped
  • 4 garlic cloves, peeled
  • 1 pound skinless chicken thighs, cut into 1" cubes
  • 4 mangos

Directions

  1. Add the fennel, coriander, cardamom, fennel seeds, garam masala, chili flakes, turmeric and cumin to a sauté pan. Set the heat to medium-low and toast the spices until fragrant, about 3 minutes.

  2. Transfer the spices to a food processor. Add the vegetable oil, coconut milk, oyster sauce, sugar, salt, onion, ginger and garlic. Pulse until almost smooth.

  3. Place the chicken in a bowl or dish and pour the marinade over it. Turn the chicken to coat it and cover the dish with plastic wrap.

  4. Marinate the chicken for 2-12 hours. Heat the grill to medium-high.

  5. Cut the mangos into ½” slices. Thread the chicken and mango slices alternately onto the skewers.

  6. Lay the skewers on the center of the grill. Grill the skewers for 5 minutes on each side. If the skewers start to overcook, move them to the bottom of the grill to finish cooking through. The chicken is ready when it reaches 165° F.

  7. Transfer the skewers to a platter and let them sit for a couple of minutes. Serve with grilled naan or pitas.

You can substitute 2 tablespoons of prepared curry spice mix for the spices in this recipe if desired. If you want to make this dish without grilling, roast the curried skewers on a sheet pan at 350 °F until the chicken reaches 165° F, about 25 minutes.
