Curried Chicken with Mango
You'd be hard pressed to find a more pleasing combination of spicy and sweet than curried chicken and mangoes!

- 2 tsp. fennel
- 2 tsp. coriander seeds
- 2 tsp. cardamom pods
- 1 tsp. fennel seeds
- 1 tsp. garam masala
- 1 tsp. chili flakes
- 1 tsp. turmeric
- 1 tsp. cumin
- 3 Tbsp. vegetable oil
- 3 Tbsp. coconut milk
- 1 tsp. oyster sauce
- 1 tsp. sugar
- Â½ tsp. kosher salt
- 1 onion, peeled and quartered
- Â½" piece ginger, peeled and roughly chopped
- 4 garlic cloves, peeled
- 1 pound skinless chicken thighs, cut into 1" cubes
- 4 mangos
Add the fennel, coriander, cardamom, fennel seeds, garam masala, chili flakes, turmeric and cumin to a sautÃ© pan. Set the heat to medium-low and toast the spices until fragrant, about 3 minutes.
Transfer the spices to a food processor. Add the vegetable oil, coconut milk, oyster sauce, sugar, salt, onion, ginger and garlic. Pulse until almost smooth.
Place the chicken in a bowl or dish and pour the marinade over it. Turn the chicken to coat it and cover the dish with plastic wrap.
Marinate the chicken for 2-12 hours. Heat the grill to medium-high.
Cut the mangos into Â½” slices. Thread the chicken and mango slices alternately onto the skewers.
Lay the skewers on the center of the grill. Grill the skewers for 5 minutes on each side. If the skewers start to overcook, move them to the bottom of the grill to finish cooking through. The chicken is ready when it reaches 165Â° F.
Transfer the skewers to a platter and let them sit for a couple of minutes. Serve with grilled naan or pitas.

Grilling smokes and caramelizes the mangos, and the coconut milk marinade keeps the chicken moist throughout cooking. You can substitute 2 tablespoons of prepared curry spice mix for the spices in this recipe if desired. If you want to make this dish without grilling, roast the curried skewers on a sheet pan at 350 Â°F until the chicken reaches 165Â° F, about 25 minutes.
