Au Gratin Three Cheese Red Potatoes

- 5 medium red skin potatoes (about 2 lbs.), thinly sliced (about â…›â€ť thick)
- 3 Tbsp. butter
- 3 Tbsp. flour
- 2Â˝ cups half and half
- Â˝ tsp. salt
- ÂĽ tsp. ground black pepper
- Cooking spray
- Â˝ cup shredded white cheddar
- Â˝ cup shredded mozzarella
- 6 slices bacon, cooked and crumbled
- ÂĽ cup Panko breadcrumbs
- â…“ cup shredded Parmesan cheese
Preheat oven to 350Â°F.
In 1-quart nonstick sauce pan, melt butter over medium heat. Whisk in flour and cook until the mixture foams and turns light yellow, about 1 minute. Remove from heat and whisk in half and half, whisking constantly. Return to heat and cook until thickened, whisking constantly, about 3-5 minutes to ensure a smooth bĂ©chamel. Turn off heat and whisk for another minute.
Spray an 8â€ťx8â€ť glass baking dish with cooking spray. Spread potatoes in the baking dish slightly on an angle in baking dish. Pour bĂ©chamel sauce and make sure the sauce gets in between all the potatoes. Top with white cheddar, mozzarella, and bacon. Cover with foil. Place in oven and bake for 60-70 minutes. Check the potatoes by inserting a toothpick into several parts of the baking dish. If it goes in easily, it is done. If not, cover and return to the oven, checking every 5-10 minutes until it is done.
Sprinkle breadcrumbs and Parmesan cheese over potatoes. Place again in oven and bake uncovered for about 10 minutes or until top is golden brown. Let stand 3 minutes. Serve.
